Another Day on the Plan and New Workout Clothes

Well peeps today was day 2 on the plan. It rocked! Woohoo!  Seriously, having a plan makes things sooooo much freakin' easier. 
So, I started my day with 2 yummy scrambled eggs on a whole wheat tortilla with a little bit of salsa.  MMMMM....
Then I had some coffee with these lovely additions:
I think I've permanently made the switch from almond milk to coconut milk.  Almond milk is a little grainy (do you get what I'm saying?), but coconut milk is totally smooth.  And I found this fantastic cream that has no crazy stuff in it.  It's just nonfat milk, cream, sugar and vanilla.  When I only use 2 tbsp in my coffee I don't feel bad at all about the cream and sugar.  Whoop!

For lunch I made this amazing salad the idea came from this post that Kath did.  I didn't have all the ingredients on hand that she did so I just kind of winged it.  My version is organic baby greens, cucumber and about a tablespoon of shredded cheese tossed in extra virgin olive oil and balsamic vinegar.  Then I topped it all with an over easy egg that I sprinkled with paprika, pepper and salt.  It was so good.  I definitely see this going into major rotation.  People listen up!  When you're going to use Olive Oil for something like a dressing use the good stuff.  I never bothered with the expensive olive oil and just figured they were all the same.  Then my mother-in-law gave us some expensive special reserve olive oil and it has changed my life.  For real!  This stuff is amazing.  I will never go back to the cheap nasty stuff again.

Dinner was at a friend's house.  They grilled bratwurst and we had dill potato salad and fruit salad.  It was all super yummy and I totally controlled my portions. 
I also got in a great workout today.  I hit the elliptical machine for 45 minutes on the interval mode.  I felt so good when I was done working up that big huge sweat.  I'm so stoked about my food intake over the past two days.  There's been no binging and I've totally stuck to my plan.  I may even lose some poundage this week despite the fact that we're eating out every night.

I have a confession to make.  Are you ready?  I have the ugliest workout clothes known to man.  I am embarrassed every time I go to the gym by my ratty t-shirts with the stains and holes and my old worn out knit capri pants.  Today I decided that had to change!  I went to our local sports store to buy some swim shoes for my boys who are constantly rubbing their poor little feet raw in the pool.  I saw that there was some pretty sweet workout clothes on sale and thought about getting them and then talked myself out of getting them.  Then I decided that I'm in this for the long run and I deserve to look cute and feel good about myself when I'm at the gym.  So, I picked up these two cute little numbers.  I didn't have a chance to try them on at the store so I was kind of nervous to get home and try them out, but I'm so happy with them.  They're all Addidas and they're super comfy.  My biggest worry was that the shorts would be too short, but they're not at all.  They hit about midway on my thigh and I'm totally comfortable with that.  Yeah for cute workout clothes!
